HOW TO MAKE A ZUCCHINI MUSHROOM RISOTTO? WITH THE COMPACT COOK ELITE

  • 1 shallot
  • 20g butter
  • 80g button mushrooms
  • 1 zucchini
  • 250g special risotto rice
  • 100g white wine (or water)
  • 550g of water
  • 1 C. vegetable stock or a cube of vegetable broth
  • 1 C. salt
  • 1 pinch of pepper
  • 2 c. heavy cream
  • 2 c. parmesan cheese

THE PREPARATION STAGES

Preparation of the recipe:

Install the blade with 4 knives.
Add the shallot, button mushrooms and 1 zucchini cut into pieces in the bowl of the Compact Cook.
Start the Chop program.
Position the mixing paddle in the bowl.
Scrape the sides of the bowl with the spatula.
Add the butter to the bowl and start program 11 (RISOTTO), changing the temperature to 120 ° C.

Add 250g of special risotto rice and 100g of white wine or water and close the lid to restart the program.
After the second beep, add 550g of water, 1 tsp. of vegetable stock or vegetable broth, salt and pepper close the lid to restart the program
At the end of cooking, add 2 tsp. heavy cream and 2 tsp. Parmesan cheese in the Compact Cook.
Mix 30 seconds on speed 2 in Manual mode.
Set aside for 10 min before serving.
