Preparation of the recipe:

For meat:
- Weigh the ingredients.
- Position the blade with 4 knives in the bowl.
–Put the onion cut in 4, the garlic and parsley in the bowl and start the CHOP program.
- Add the mixing paddle to the bowl.
- Add the olive oil to the bowl and start program 6 (SAUCE MIJOTEE).
- At the beep, add the meat, the bouquet garni, the salt, the pepper, the half tomato, the cumin.
- Before closing the cover, adjust the duration of the simmer phase to 15 min instead of 45 and the temperature to 90 ° C instead of 100 ° C. Close the cover to restart the program. Leave the cover cap open.
- Preheat the oven to 200 ° C.
- In a gratin dish, add the meat, cover with mash, then sprinkle with breadcrumbs made with the HACHER program of COMPACT COOK.
For the dressing:
You will need:
- 20g of butter
- Rusks or breadcrumbs
- 50g of Comté cut into strips
- Sprinkle with butter and Comté nuts cut into strips.
- Place in the oven for 20 minutes at 200 ° C.
